I made these, and you’ll love them. These vanilla bean macarons and they’re so soft and creamy they’re french-style cookies that are great to make when it’s hot outside and have with a cold drink

here’s how i make vanilla bean macarons step by step
step 1
i start by heating my oven to 300°f (150°c) then i line two baking sheets with parchment paper

i grab a bowl and mix almond flour with powdered sugar really good until there are no lumps
step 3

next i crack the egg whites into a clean bowl and beat them slowly i add regular sugar little by little while mixing and keep mixing until it gets fluffy and forms peaks

i add the dry mix to the fluffy egg whites little by little then i add vanilla and mix everything gently until it’s smooth and shiny

i scoop the batter into a piping bag and pipe small circles onto the baking sheets i tap the baking sheets a few times on the counter to pop any air bubbles

i let the macarons sit for 30-60 minutes until they form a dry “skin” that’s not sticky anymore

i bake them for 15-18 minutes until they’re firm on top but soft inside i let them cool completely before peeling them off the paper

finally i match up same-sized macaron shells spread vanilla buttercream on one half and gently press them together to make a sandwich

- Sift your almond flour and icing sugar so you can get out those lumps and have an even batter.
- Draw on the sheet if you are new to the macaron shape so that you can practice piping it on the baking sheet first.
- Don’t hurry! Let the macarons dry a little before baking so they get a good shell.
- Gently lift the macarons with a spatula; they are very delicate and must be handled carefully!
